Tlayudería was developed as an independent concept derived from the success and culinary foundation of La Carreta. While rooted in the traditions of Oaxaca, the project was designed to stand on its own as a focused, scalable fast-casual restaurant centered around tlayudas, tacos, and authentic regional flavors.
Cooking Ideas® led the project from concept creation through execution. The scope included business development, brand strategy, menu development, site selection, operational planning, interior design, construction oversight, and launch preparation. A key objective was to translate the atmosphere and accessibility of Oaxaca’s traditional public markets into a compact, approachable dining experience adapted to the Los Cabos market.
The project included the development of a complete visual identity system, brand positioning, graphic standards, interior architecture, serviceware selection, and customer experience design. Cooking Ideas® also established operational procedures, menu engineering, workflow logistics, and kitchen requirements to support a high-volume, fast-service model without compromising authenticity or ingredient quality.
Beyond the physical space, the engagement included website development, social media activation, and digital presence strategy to support the brand’s introduction to the market. The result was a fully integrated hospitality concept that transformed a single signature product category into a standalone restaurant brand with its own identity, positioning, and growth potential.
