La Carreta was developed to introduce an authentic Oaxacan culinary experience to the Los Cabos market while preserving the traditions, ingredients, recipes, and cultural identity of its founders. Cooking Ideas® engaged to lead the project from concept development through operational implementation.
The scope included business planning, concept creation, menu development, recipe standardization, supplier sourcing, operational structure, financial planning, branding, positioning, and launch strategy. A key component of the project was establishing a supply chain capable of sourcing approximately 90% of core ingredients directly from Oaxaca, ensuring authenticity across the menu and overall guest experience.
Cooking Ideas® worked closely with the ownership team to translate generations of family recipes and regional culinary traditions into a scalable restaurant operation while maintaining the integrity of the original concept. Operational systems, purchasing procedures, quality standards, and service protocols were developed to support long-term consistency and growth.
Nearly a decade later, La Carreta continues to operate under the original concept, remaining one of the few restaurants in Los Cabos dedicated to traditional Oaxacan cuisine. The business has expanded beyond restaurant operations to include catering services while maintaining the same commitment to authenticity, regional sourcing, and cultural preservation established at its inception.
